With These Yummy Home-cooked Meals

Will these taste amazing? Yes, they will. Will they taste a little different then your store bought packaged ones or the ones from fast food restaurants? Yes, they will - but you can be sure you and your kids will love them and you will know everyone is getting wholesome food instead of other things.

These can be made ahead of time and frozen for a quick meal as well,

These homemade Gluten-Free Chicken Nuggets are tender, juicy, and super crispy, right from the oven!

PREP TIME10 minutes

COOK TIME25 minutes

TOTAL TIME35 minutes

SIMPLE INGREDIENTS

You will need:

1 pound chicken breast, skinless, boneless and cut into bite-size pieces

(or you can also mince this meat and put into ball like you would meat balls - check our chicken meatballs recipe)

1 cup of gluten free flour ( or flour of your choice, even gluten)

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon paprika

2 eggs, beaten

1 tsp vanilla

1 cup gluten-free panko breadcrumbs ( or whatever bread crumbs you choose)

1 tsp sugar ( Monk or stevia, or sugar of your choice)

SIMPLE INSTRUCTIONS

  1. Preheat the oven to 425ºF and spray a baking sheet with cooking spray or brush with Coconut or Olive oil.

  2. Set up 3 shallow bowls

    • Bowl 1 add in Flour, Salt, Pepper mix together

    • Bowl 2 add in eggs and beat then add in vanilla

    • Bowl 3 add in Panko bread crumbs mix in with sugar

Coat each piece of chicken in the flour mixture first, then transfer to the egg mixture and coat well, making sure you allow any excess egg to drip off before dipping into the panko breadcrumbs. 

  1. Place the breaded chicken nuggets onto the baking sheet. Bake in the preheated oven for 20-25 minutes (flip the nuggets halfway through) until the chicken nuggets are golden brown. They are ready when the internal temperature reaches 165ºF.

  2. Serve with your favorite dipping sauce - bbq, honey garlic, ketchup, mayonaise etc etc.
